I live in the Pacific North West where wild berries are abundant--recently with the help of Auggie my goose--we went berry picking and 'we' made this delightful jam!
Heart Opening Blackberry Jam
2 Cups crushed blackberries, I suggest using a glass bowl and smashing/crushing with a wooden spoon (this is a very satisfying act in its own right)
2 Cups sugar, do not skimp, as this is what causes the jam to firm up
2 Teaspoons lime juice
1 Teaspoon rose cordial or rose water
Instructions
In a small saucepan cook the blackberries, sugar, lime juice and rose cordial/water on medium high heat for 5 minutes, reduce heat to medium for 9 – 11 minutes or until mixture comes to 220° on a candy thermometer. Stir often.
Skim foam off as needed and pour into sterilized canning jars and immediately put the lid on or it will not seal properly. The mixture will thicken as it cools. Once cooled, place in freezer until ready to use. This Jam will keep up to 1 year in the freezer and about 3 weeks in the refrigerator.
