Matters of the Heart

This soup was created for matters of the heart. It is meant for moments when you want to invite togetherness, soften toward difference, or simply sit in warmth and connection, whatever form that may take.

Apples of Love Soup (Tomato Soup)

10 sun-dried tomatoes
White wine
1 medium purple onion
2 tablespoons avocado oil
2 small Yukon Gold potatoes, peeled and diced
1 teaspoon basil
1 teaspoon thyme
4 large cloves garlic, crushed
28-ounce can diced tomatoes
1 tablespoon sea salt
½ teaspoon ground black pepper
1½ teaspoons brown sugar
2 cups vegetable stock
Fresh basil, for garnish

Coarsely chop the sun-dried tomatoes; in a small saucepan, cover eight of them with white wine and simmer for 3 to 4 minutes, until soft. Reserve the liquid. Coarsely chop the onion, add to a large soup pot with the avocado oil, and sauté for 3 minutes. Add the potatoes and herbs and continue cooking for 4 minutes. Add the garlic, softened tomatoes, and reserved liquid, and sauté until the garlic is fragrant. Add the diced tomatoes, salt, pepper, and brown sugar and cook for 4 to 5 minutes, stirring often. Finally, add the vegetable stock and simmer for 15 to 20 minutes. Either use an immersion blender and blend right in the pot until smooth, or blend in batches in an upright blender. Adjust the seasonings to taste. Garnish with the remaining dried tomatoes, cut into thin strips, and some fresh basil.
